Rhubarb Cake,
Rhubarb-Strawberry Coffee Cake ]

1½ cups brown sugar
-
⅔ cup oil
-
1 egg
-
1 teaspoon baking soda
-
1 teaspoon salt
-
1 teaspoon vanilla
-
1 cup sour milk
-
2½ cups flour
-
1½ cups rhubarb ( peeled and chopped)

½ cup nuts
Topping:
-
½ cup sugar
-
1 tablespoon melted butter
-
Mix brown sugar, oil and egg
-
Mix sour milk, vanilla, soda, and salt
-
Add to brown sugar mixture
-
Add flour, rhubarb and nuts
-
Pour into two greased 8 x 4 inch pans
-
Mix sugar and melted butter well and spread over top.

Bake at 325 degrees for 60 minutes
